VINEYARD
The Wyebo vineyard is in Oakbank in the Adelaide Hills; 'wyebo' is an Aboriginal word meaning 'small'. Leo O'Leary (David O'Leary's grandfather) purchased the property in 1912 and it remains in the family to this day.
The high altitude and cool nights in the Adelaide Hills are ideal for slow and even ripening, producing wines with character and purity of fruit. The soils are red loam over quartz and schist, ensuring they are well-drained which allows consistency and balance for the vine.
VINIFICATION
Small batch ferment in two and four tonne fermenters over a 12 day period using natural yeast, then hand-plunged. This wine was left on skins for 15 days to enhance tannin complexity, maximising flavour and length. Pressed to tank then racked to oak after four days (25% new French oak, 75% one- and two-year-old French oak) for a total of two years.
