43% Doctor's Block Polish Hill River (organic), 43% Jefferies Armagh, 14% Angelo Maglier McLaren Vale

VINIFICATION

Small batch ferment in two and four tonne fermenters over a twelve day period using natural yeast and hand plunged. The wine was left on skins post fermentation, for additional fifteen days to enhance tannin complexity maximising flavour and length. Pressed to tank then racked to oak after four days (25% new French oak; 75% one and two year old French oak) for a total of two years.

Brick red with a slight purple tinge.

BOUQUET

Powerful red fruits, mocha and spice.

PALATE

Concentrated and seamless. Rich French oak balanced with bright fruit and chalky tannins.

David O'Leary recommends aged rib eye steak with red wine pepper sauce.

CELLARING POTENTIAL

Drinking extremely well now or will evolve for a further eight - twelve years with careful cellaring.
