43% Doctor's Block Polish Hill River (organic), 43% Jefferies Armagh, 14% Angelo Maglier McLaren Vale

VINIFICATION

Small batch ferment in two and four tonne fermenters over a twelve day period using natural yeast and hand plunged. The wine was left on skins post fermentation, for additional fifteen days to enhance tannin complexity maximising flavour and length. Pressed to tank then racked to oak after four days (25% new French oak; 75% one and two year old French oak) for a total of two years.

COLOUR

Brick red with a slight purple tinge.

BOUQUET

Black jubey dark fruit, with hints of liquorice and pepper.

PALATE

This wine has a rich concentrated palate, powerful and with great length. The balance is fine and with long tannins.

FOOD MATCH

David O'Leary recommends aged rib eye steak with red wine pepper sauce.

CELLARING POTENTIAL

Drinking extremely well now or will evolve for a further eight - twelve years with careful cellaring.

WINEMAKERS NOTES

2015 harvest was one of the warmer vintages of recent times, producing great concentration of flavour. One of the great red years to cellar.
