VINEYARD

Fruit is sourced from two sub regions with in the Clare Valley. The organically certified 'Doctor's block' is located in the Polish Hill River Region, a superior cool climate vineyard which is dry grown and low yielding. The Armagh vineyard produces fruit from 50 year old dry grown vines. The sandy loam soils are made up of sand, silt and clay which support the root structure of the vine and influences the drainage levels and the amount of minerals and nutrients that the vine is exposed to in turn producing good quality fruit.

VINIFICATION

Small batch ferment in 2 and 4 tonne fermenters over a 12 day period using natural yeast and hand plunged. The wine was left on skins for fifteen days to enhance tannin complexity maximising flavour and length. Pressed to tank then racked to oak after 4 days (25% new French oak; 75% seasoned oak) for a total of two years.

COLOUR

Deep red with purple hues.

BOUQUET

Lifted vibrant aromatics. Blackcurrant, violets and premium French oak.

PALATE

Powerful and pure. Concentrated forest fruits, wild berries. Chalky tannins.

FOOD MATCH

Slow cooked lamb shanks with button mushrooms and served with polenta.

CELLARING POTENTIAL

The youthfulness of this wine shows great elegance and restraint. Over time it will develop powerful violets and beautiful ‘classic’ cabernet richness. This wine will continue to improve over the next six-seven years.

WINEMAKERS NOTES

The contrasting influences of the two sub-regions produce a great synergy.
