43% Doctor's Block Polish Hill River (organic), 43% Jefferies Armagh, 14% Angelo Maglieri McLaren Vale

VINIFICATION

Small batch ferment in two and four tonne fermenters over a twelve day period using natural yeast and hand plunged. The wine was left on skins post fermentation, for an additional fifteen days to enhance tannin complexity maximising flavour and length. Pressed to tank then racked to oak after four days (25% new French oak; 75% one and two year old French oak) for a total of two years

COLOUR

Ruby red with deep purple hues.

BOUQUET

Violets, dark forest fruits, liquorice and intense mocha spice. 

PALATE

Concentrated and powerful. Rich fruit, plush silky tannins and balanced length of flavour. 

FOOD MATCH

David O'Leary recommends aged rib eye steak and smashed potatoes.

CELLARING POTENTIAL

Drinking extremely well now or will evolve for a further eight - twelve years with careful cellaring.

WINEMAKERS NOTES

2014 had a long cool ripening period resulting in fine elegant styles.
