VINEYARD
David and Sue Cherry (nee O'Leary) Adelaide Hills vineyard was planted in 1990. The Adelaide Hills is arguably one of the best regions in Australia for Chardonnay, Sauvignon Blanc and Pinot Noir. The altitude, soils and weather patterns, influenced by the Mt Lofty Ranges seem to draw the best from these varieties.
The cool climate influence dictates a long and even ripening, maximising varietal character and intensity of flavour. The O'Leary family vineyard at Oakbank faces north-east and is quite high on a gentle sloping hill.
The soils are gravelly and well drained with a large amount of quartz.
VINIFICATION
Each section of the vineyard kept separate to maximise its potential. At the winery the fruit is de-stemmed and given a gentle crush to burst the individual berries. The finest quality free-run juice is chilled to 5 degrees celsius and to preserve the expression of the fruit, not filtered prior to ferment. Partial lees added back to juice for fermentation to add creamy texture and length. Racked off lees after four days and yeasted with a natural yeast. The wine is chilled in tanks post fermentation, then filtered once prior to bottling.

This is one of the best examples from our Adelaide Hills Vineyard, with the purity of fruit being exceptional, with lifted tropical fruits, in particular passionfruit and gooseberry.
PALATE
The palate is fruit driven and long with balanced crisp acid finish. Vibrant, bright and zippy tropical fruits displaying textbook Sauvignon Blanc flavours.

2012 Adelaide Hills Sauvignon Blanc won Trophies for Best Sauvignon Blanc in Show and Best White Wine under $20 at the 2012 Royal Adelaide Wine Show and Top Gold in Class 4, Dry White - Sauvignon Blanc at the Royal Queensland Wine Show.
